I'm surprised Sarah didn't reduce the statue to a pile of rocky substrate.
That said...where is this going? Statue goes up, Sarah dislikes statue, steals statue, statue is rediscovered. It could be easily explained away by ordinary vandals/pranksters and even if there's evidence of her (e.g. pawprints) it's just going to feed the Parkie legend a bit and it's already at saturation.
