Put reeeeal simply, people were calculating the gross tonnage capacity of boats long before Archimedes discovered the principal of displacement.
Lots of stuff has been used before it was made scientific. Undoubtedly some Were's have taken copious notes about what happens when they shift...and come up with nothing.
There are certain sciences that are derivative sciences: There's no explanation as to why something happens the way it does...until somebody in totally unrelated field makes a discovery that just happens to fit into the first area of inquiry.
As Bar-1 said, the were's are too close to the question, and getting help would blow the "Secret".
Really, as long as it works, and works reliably, there won't be much interest in the "why"...that's why medicine advances so fast in wartime, the old methods aren't saving enough wounded soldiers.
Now, if Werewolves started turning...not into Werewolves, but instead were turning into Armadillos; you can bet the process would get investigated. But until that happens, Were's are just like everybody else,
